This recipe for Vegan Butternut Squash Wellington combines the rich flavours of butternut squash, aromatic herbs, and a hearty vegan sausage mix, creating a dish that will impress even the most discerning taste buds. You will need:
- 1 butternut squash
- Sprigs of thyme
- Cloves of garlic
- 100g vegan sausage mix
- 75ml water
- 5 sprigs chopped thyme
- 25g chopped cranberries
- 20g dried onions
- ¼ tsp grated nutmeg
- ½ tsp smoked paprika
- 40g toasted flaked almonds, chopped
- ½ tsp chilli flakes
- Zest of 1 orange
- ½ tsp wholegrain mustard
- Salt and pepper to taste
- 50g Kale
Instructions:
1. Preheat the Oven:
Preheat your oven to 170°C to get things started.
2. Prepare the Butternut Squash:
- Cut the butternut squash in half lengthways.
- Scoop out the seeds and oil both sides of the squash.
- Season and place sprigs of thyme and cloves of garlic on the flesh side.
- Flip the squash over so that the skin side is facing up, season, and roast in the oven for 45 minutes.
3. Prepare the Filling:
- Leave the roasted squash to cool for 10 minutes.
- Scoop out the flesh, leaving a border.
- In a bowl, mix the vegan sausage mix with water.
- Add chopped thyme, cranberries, dried onions, grated nutmeg, smoked paprika, chopped almonds, chilli flakes, orange zest, wholegrain mustard, salt, and pepper.
- Stir in the roasted butternut squash flesh.
4. Assemble the Stuffed Squash:
- Strip the kale from the stalks and place it into the squash halves.
- Top with the prepared sausage mix, packing it tightly.
- Place one half on top of the other.
5. Secure with String:
- Take 3 pieces of string and lay them evenly spaced, horizontally, on an oiled baking tray.
- Place the whole butternut squash on top of the string and tie each piece securely.
6. **Bake and Enjoy:**
- Bake the assembled squash in the oven for an hour.
- Cover with foil and let it rest for 20 minutes to allow the stuffing to settle.
